Research thrusts student into spotlight

A 23-year-old Lafontaine woman has solved a puzzle many longtime scientists have been unable to unravel.

Celine Roi, who graduated from Ryerson University’s public health program this past spring, has uncovered a correlation between a specific food pathogen and food poisoning.

Her research will be published in the Canadian Medical Journal.

While this will be the first time Roi will have had her work published, she is no stranger to success. She’s been awarded a total of nine academic excellence awards – including one for her research study on food pathogens (bacteria that can cause disease and food poisoning).

“It’s pretty exciting to get my work published in a medical journal,” she said. “My first reaction was I was excited about it and happy.”

The yearlong study was part of two required courses, she said, adding she discovered a correlation between eating carbohydrates and getting ill due to a particular pathogen.

“I found out that with the pathogen I used (Vibrio parahemolyticus), you’re more likely to get severely sick if you eat anything high in carbohydrates,” she explained. “Most scientists couldn’t figure it out.”

This discovery is a pretty big deal, she acknowledged, noting the bacteria is found mostly in seafood.

With school now behind her, Roi is taking a bit of a break before embarking on the next part of her life: “I would like to do more research, but I’m not exactly sure what I am doing next.”
